Bromelain is extracted from the stem of Ananas Comosus (commonly called pineapple) through solvent extraction. Bromelain is a off-white powder, slightly soluble in water, insoluble in ethanol, chloroform. Bromelain is mainly used in food as softener, meat tenderizer and food additives; it is also used in cosmetics for skin care; besides, it is used in feeds.
